Shredded Chicken Enchiladas

I came across a very cool tip the other day that I just had to try out for myself and then share with you. So, I set out to make Shredded Chicken Enchiladas just to test it out.
I have made my own version of enchiladas before, but this one was a bit different. First it included cilantro, which I just love.


 And second it required cooking the chicken in the enchilada sauce. Normally I just boil my chicken in water, shred it and then add the sauce and cheese. I liked this way much better, it gave the chicken a great flavor and by heating up the sauce first, which I don't normally do, it had a richer flavor.

Now for that amazing tip. Apparently if you take your still warm chicken and place it in your stand mixer fitted with the paddle attachment it will shred your chicken up real nice. Genius. Why didn't I think of that?


I can't tell you how happy I am to know this, I hate hate hate shredding chicken. It is the worst, so time consuming and tedious. Not anymore. You are welcome.

I just made Chicken Enchiladas a few weeks ago. It was my first attempt. Needless to say, they didn't turn out that great. They didn't have enough flavor. I love this idea and will be asking for a full recipe. I hated shredding the chicken too. I am going to have to mix it like you did. Genius.

What!? That's a really good tip. I hate shredding chicken (I always make allen do that).
